The Canadian Maritimes and Maine it’s your basic lobster roll. Lobster, McLobster sauce and lettuce in a lightly toasted bun. In the maritimes lobster is a very common food and not an expensive one at that. It’s actually kind of a cheap eat!

Since the 1950′s Poutine is a traditional French Canadian dish of french fries, layered with cheese curds and smothered beneath brown gravy. Cheese curds (fromage en grains) are the solid parts of sour milk. Delicious chewy and squeaky and rubbery….but under hot gravy….it becomes totally and utterly melted and fantastically gooey….mmmmm poutine….
