You may think the model for fast food is relatively stable: burgers, fries, soda. Well, not if you’re Jonathan Kaplan. A co-founder of the company behind the Flip Video camcorder, Kaplan is planning on starting a chain of grilled cheese restaurants (called “The Melt“), with the first opening this week in San Francisco’s SoMa neighborhood. He hopes to open 25 to 50 restaurants within the next year and about 500 across the country within five years.

Fuelling this idea is a bit of innovation provided by Swedish home appliance maker Electrolux, who are providing a special contraption that can create uniform grilled cheese sandwiches. This machine combines two induction burners, a microwave and non-stick pads, which toasts the bread and melts the cheese without squishing the sandwich. Should the Melt take off, I’m sure this gadget will soon end up on store shelves. Question I have is, why does uniformity have to be such a cornerstone of fast food? I understand the need for consistent standards at all the outlets of a national chain, but does the food have to be exactly the same?
