While I love going out for brunch as much as the next person, sometimes it’s really nice to eschew the long line ups and often greasy breakfast fare, and take that time to cook something up for a couple of friends at home. A brunch party is much less formal (read: stressful) than a dinner party and a few extra touches go a long way.

Here’s what I made last week…maybe it’ll offer some inspiration for your next brunch.

fruit salad with mint, lime juice, and a touch of maple syrup

curried quinoa salad with mango

avocado-roasted red pepper frittata with black beans

wash it all down with a refreshing Pimm's cup!

The frittata recipe is based on one by ‘Two Hot Tamales’ (Susan Feniger and Mary Sue Milliken). I replaced the piquillo peppers which I couldn’t find with regular jarred roasted red peppers and added 1/2 a jalapeƱo for the spice.
