The reality is that the traditional north american diet contains mainly low fiber, high fat and high sugar content food. Which in turn makes them less satiating or physically satisfying than less processed traditional foods. Adding satiating foods to the diet may be a way to control total calorie intake and weight gain. People who are depending on the “I feel full” effect of foods to cut down on the amount they eat will be disappointed, because the urge to eat is controlled by other things besides the stomach. That’s right, the brain sends messages saying “hey we’re good now, stop eating”. How many people ignore this signal either consciously or subconsciously? I know I have and do quite often.
Apparently white bread is often used as a benchmark 100, here’s a list of foods and their satiety rating compared to this.
